We had a really good Thanksgiving this year, we made our own Thanksgiving dinner at home and then went to my dad’s house on Thanksgiving. We had tons of our own leftovers plus we also got some leftovers from my dads because there was way too much left over there as well. We ended up with tons of turkey and we got slightly sick of turkey with gravy and turkey sandwiches so I decided to use some of the turkey to make Turkey Curry. I actually made this dish twice with the leftovers, I have made this dish differently before using chicken but made it a different way this time.

So if you have tons of turkey left over as well the only other things you need are about 1/2 an onion, 1 green apple, 2 tablespoons curry powder, 2 tablespoons flour, 1 can chicken broth, 1/2 teaspoon ginger and about 2 tablespoons of lemon juice. You also need some cooked white rice to serve this over.

Melt some butter in a pan and add the chopped onion and apple. Let them simmer a bit until they are soft and then add the curry, flour and ginger. Stir until it is combined well and then add the chicken broth. Heat that until it boils and let it simmer for 5 minutes. Finally, add 3 cups of turkey in bite size pieces and let that simmer for 10 minutes longer and then add the lemon juice in right before serving. Serve over hot rice and it makes a really delicious meal! Enjoy!

Just mix all of the ingredients together and be sure to use slightly softened butter, use your hands if the batter is too crumbly. Then just roll out the dough to 1/2 inch thick and cut out shapes by hand or use cookie cutters. Bake at 350 degrees for about 20 minutes.

My daughter and I made flower and heart shapes. I actually left a really small mold of dough for her to play with and she made her own shapes, it was pretty cute.

2 cans of stewed tomatoes

pita bread (optional)

sour cream or plain yogurt (optional)

In all honesty if I don’t have any lamb available I just use a pound of ground beef, it tastes just as good.

Brown the meat of your choice. Once it has browned, add the package of orzo and the 2 cans of stewed tomatoes. Cover and let it simmer on low for about 20-30 minutes, depending on your stove. Just make sure you check it and stir often so that it doesn’t stick to the bottom of the pan. Once It’s all done it tastes great on warm pita bread, topped with sour cream or plain yogurt. Although it can do without those two extra things, they make great additions. Serve with a nice salad and you’ve got yourself an excellent meal!

Last night I was feeling a bit on the tired side and decided to do a short cut version of chicken fettuccine alfredo. I usually cut up the chicken and then cook it and add the alfredo sauce and heat it up. Well I didn’t feel like cutting up all the chicken so I just baked it in the oven with some seosonings.

I cooked the broccoli and cauliflower on the stove along with the fettuccine noodles. When they were both finished, I mixed the alfredo sauce into them and warmed it up. It went very well with the chicken on the side and was much easier for me. I will probably do this again in the future since it was very good and everyone loved it.

She is really such a big help, she helped mix ingredients, lay out the cupcake cups for me, frost them and eat them. We had some very delicious lemony cupcakes. Not only are they delicious but they were fun to make as well.

The last time we made cupcakes was on Father’s Day, we made some chocolate ones. They can be themed to fit any holiday though and I plan to make more in the future. Since I make quite a bit of them they are also fun to give out to friends and stuff.

They make the house smell really good as well, nothing better than fresh goodies in the oven.

It came out so awesome, it is delicious! It wasn’t as hard to make as I thought either. It called for 3 cups of grated carrots and I did that, the rest of the recipe was very simple.

I also made some cream cheese frosting to go on top. It just called for 1 package of cream cheese, butter, vanilla extract and powdered sugar. Very simple and also very yummy! This is also a good way for me to get them to eat a healthy snack hehe Not that they don’t normally eat healthy but you can’t really tell that there are tons of carrots in the cake!
